Keto Fajitas
Fajita filling so good, you'll never miss the tortilla! This is my own simple creation, except for the seasoning which I found at
Allrecipes.com
INGREDIENTS
- 1 T olive or coconut oil
- 1 red bell pepper, sliced or chopped (your preference)
- 1 onion, sliced or chopped (your preference)
- 2 cloves garlic, chopped (or, if you're a garlic freak like me, 52 cloves
(J/L lol) OK well, maybe 5. I seriously LOVE garlic
- 2 teaspoons chili powder
- 1 teaspoon salt (I like pink himalayan)
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoons cayenne pepper
- 1/2 teaspoon ground cumin
- 1 lb ground beef or turkey
- 1/4 cup water
- 1 tablespoon apple cider vinegar
- 2 teaspoons eriththritol (or sweetener of your choice
- Chopped cilantro for garnish (optional)
- 1 avocado, quartered and sliced or chopped (for garnish, optional)
DIRECTIONS
- Mix all dry seasonings together in a small bowl and set aside.
- Heat the olive oil in a large skillet.
- Add onions, garlic and red peppers Cook about 5 minutes, until onion is transluscent and peppers are just a bit tender
- Remove onion, pepper and garlic mixture from pan and set aside.
- Add ground beef to the same skillet. Break up the meat and cook until until its cooked through. Drain off enough of the grease as you like (remember a key of the Keto diet is to consume fats, so just drain off enough so it looks palatable to you).
- Add pepper mixture to ground beef.
- Sprinkle the dry spice mixture and cook, stirring until incorporated and the spices have released their aroma.
- Stir in water and let simmer until most of the water is absorbed.
- Remove from heat and stir in vinegar. (This adds the slightes tang to the meat).
- Divied into four portions. Sprinkle each portion with cilantro
- Serve warm on a plate with sliced avocado
